This absolute belter of a recipe is perfect for your first time using a pellet grill. Simply rub down the meat and put it in a camp oven with the remaining ingredients, pop it in your Traeger Eastwood 22, and away you go!
INGREDIENTS
- 2tsp garlic Salt
- 1tsp kosher salt
- 1tbsp black pepper
- 3 lb chuck roast
- 2 Cup potatoes, halved
- 2 Cup carrots, quartered
- 2 onions, peeled and halved
- 1 Cup of decent red wine
- 4 sprigs of fresh rosemary
- 2 dried chipotle pepper
- 2 Cups beef stock

STEPS
- Combine the dry herbs and spices in a large bowl, place meat in the bowl and rub the spice mix in thoroughy.
2. Set Traeger temperature to 180℉ and preheat, lid closed for 15 minutes.
- 3. Place the meat on the grilling rack and roast for 1-1/2 hours.
- 4. Remove roast from grill and increase temperature to 275℉.
5. Transfer the meat, potatoes, carrots, onions, wine, rosemary, thyme, chipotle peppers and stock to a large camp oven.
6. Place the lid on the camp oven and place into the smoker. At 275℉, cook the roast for 4 to 5 hours or until meat is very tender.
7. Serve with cold pale ale and friends.
